Rosé of Pinot Noir
We farm specific vineyard sites and clones purely for our estate Rosé of Pinot Noir production. The grapes are harvested at approximately 22 Brix; a level of ripeness to achieve balance in the bottle. We aim for a finished alcohol of less than 14%. After hand harvesting the vines, we move the whole clusters directly to our press, applying just enough pressure to extract little to no tannin from the stems. After a night of cold settling, the Rosé juice is racked away from the solids. It begins to slowly ferment. The fermentation temperature remains in the 50’s, preserving the crisp, clean, bright flavors of strawberry, guava and stone fruit.
